The Big Mama Pickled Sausage is a snack food item you have probably seen thousands of times in your life. They are everywhere! Often at the checkout at the gas station, or target, or you local convenience grocery story.
These snacks are made by a company called Penrose (which is owned by ConAgra) and they have been around more than 40 years. They are the industry leader in terms of pickled sausages.
People love these when traveling – truckers, kids, adults, basically everyone.

I picked this up at my local AM/PM convenience store. It was sitting right by the check out counter, with the Slim Jims and the travel-sized packs of beef jerky, nuts and other candy bars.
There is a “regular” version of the Pickled sausage – that original one is the Big Mama Pickled Sausage. The “Tijuana” version is 300% hotter though, so if you like SPICY, this is the snack sausage for you!
Ingredients – it is made with “mechanically separated chicken”, pork, pork hearts, and beef, among the list of flavorings and chemicals. And you will smell the vinegar when you first open it. They have a very strong smell that you would expect from a truck stop snack food – and we know you know what we mean.
Overall the consistency is closer to that of a pickled hotdog so it is less firm than a firm pepperoni stick for example.

When you first open one of these, the first thing you will notice is the strong and pungent flavor of the pickling juice. If you’ve ever had pickled eggs, this is similar with obvious olfactory notes of vinegar, salt and paprika.
The first bite is definitely hot. It is subtle at first so you won’t be overpowered with heat on the first bite. But wait a few minutes till you have had a few bites. You will feel the heat on your tongue and in your throat.
If you love spice, this is the pickled sausage for you!

The quality of the sausage is good. This is really a snack product for people who like extreme flavor. So if you like to buy snacks that are labeled “EXTREME FLAVOR” then this is for you!

Summary
This is an extremely spicy sausage. If you love spice you will love it!
If you are an average person that doesn’t love extreme spice, you probably do not want to eat it on an empty stomach. Consider having a bite or two as an accent to your meal and enjoy it as a snack after your meal.
Also, it would make a great addition to other food items. For example, it would be a great addition to a bowl of chili, if you cut it into small pieces. You could even add it to a steak salad for some heat.
We think it would probably best with some scrambled eggs and cheese.
And of course if you are drinking beer or bourbon on a hot summer day, it would be a great appetizer.
